How often do we have a manufacturing problem with a product? Or perhaps we don’t like it at all? Or we are not fully convinced because it does not meet our expectations?

To find the solution, the first step is to get the diagnosis right, and to be clear about the causes of the problem.

Once the diagnosis is clear, we can provide the relevant and effective solutions, which can be of a very diverse nature.

But without a clear and correct diagnosis, no progress can be made in the search for solutions.

METHODOLOGY AND PROCESSES

Often, in the meat industry, we are not subject to a single production method, but to several, to reach the same end, and therefore we must adapt to many variables, some depend on the means and facilities available, others, the local tastes or flavors, others, the final quality, or image of the product being pursued, and so on.

BRUGUÉS & SONS CONSULTING, can be very useful when recommending proven and contrasted elaboration processes, which adapt to the idea you have of your final product.

FORMULATION

We can intervene in the current formula used by your industry, suggesting or correcting some aspects of it, to improve or adapt it; or, designing and creating a new formula for a newly created product. Obviously, we are referring to a totally open and disaggregated formulation, both qualitatively and quantitatively.

We formulate products à la carte, depending on the objectives of our clients, adapting ourselves to the performance or economic scandals demanded.

Our way of proceeding, when formulating a meat product, be it fresh, cured or cooked, is almost always by breaking down the formulation by blocks, that is to say:

  • Conservation Block.
  • Water Retention Block
  • Spice, Aroma and Flavor Block.
  • Color Block
  • Bacterial cultures, or “starters”, organic preservatives, etc, (if the product requires it).

Always adapting to the legal framework and the internal regulations in vigor in each country.

INFRASTRUCTURES

In order to undertake very specific industrial meat manufacturing projects, we need the related means that fit our manufacturing needs.

That is why we must provide ourselves with the most suitable means and infrastructure possible, which are multi-purpose and can be shared with other projects at the same time, without having to duplicate resources.

At BRUGUES & SONS CONSULTING, we advise optimal equipment for each manufacturing project.

We remain oblivious to the commercial interest of the brands, but we do recommend some of them, or certain models, because of their proven effectiveness in certain market segments.

If, for whatever reason, this is not possible, we recommend other alternatives, which are also adapted to our final objective.

BRUGUES & SONS CONSULTING always considers the adaptation and conformity of its recipes or formulations with the food regulations in force in the European Economic Community, and in some cases, exceptionally, consultation is requested from the competent state bodies in each country.
